Ingredients

  • 1 large clove garlic

  • 2 to 6 jalapeno peppers, seeds removed

  • 4 small tomatillos

  • 6 plum tomatoes, diced (about 2 1/2 c.)

  • 1 medium onion, finely diced

  • 1/2 green bell pepper, finely diced

  • 2 T. coarsely chopped parsley

  • 2 T. coarsely chopped cilantro

  • juice of 1 lime

  • 1 tsp of salt

  • 1 T. of ground cumin

Directions

  • In a food processor, finely chop garlic and jalapeno peppers. Add tomatillos and chop again. Remove from food processor.
  • Use the food processor to finely dice green bell peppers, remove from the food processor.
  • Use the food processor to finely dice onion, remove from the food processor
  • Combine all the ingredients in a glass or stainless steel bow

Notes

  • Adjust the number of jalapenos to suit your taste. Also adjust for salt according to your taste. Serve with tortillas chips or as a topping on tacos or taco salad
