This was one of Daddy’s favorites; served on Father’s Day along with home-made strawberry ice cream

Ingredients

  • Cake
  • 1 1/4 cup hot water

  • 1 cup quick cook oats

  • 1/2 cup of butter, or one stick

  • 2 eggs

  • 1 cup brown sugar

  • 1 cup white sugar

  • 1 1/3 cup of flour

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1/2 tsp nutmeg

  • 1/2 tsp table salt

  • Topping
  • 5 Tbs butter, melted

  • 1/4 cup cream

  • 1 cup of broken pecans

  • 1 cup of coconut

  • 1/2 cup sugar

  • 1/2 tsp vanilla

Directions

  • Pre-heat oven to 350 degrees
  • Place oats in a large mixing bowl and pour in hot water
  • Cut up the stick of butter and add to oatmeal mixture and let stand for 20 minutes
  • After 20 minutes add the remaining ingredients for the cake and stir well to combine
  • Baked in a greased and floured 9×13 pan for 30-35 minutes, until a toothpick inserted in the middle of the cake comes out clean
  • After the cake has cooled for 10 minutes, combine the topping ingredients in a mixing bowl
  • Spread over the top of the cake, and place under the broiler about 5 inches away from heat source. Keep an eye on it while it broils, it quickly goes from almost golden brown to black in just a few seconds
