Oatmeal Spice Cake

Ingredients
- Cake
1 1/4 cup hot water
1 cup quick cook oats
1/2 cup of butter, or one stick
2 eggs
1 cup brown sugar
1 cup white sugar
1 1/3 cup of flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp table salt
- Topping
5 Tbs butter, melted
1/4 cup cream
1 cup of broken pecans
1 cup of coconut
1/2 cup sugar
1/2 tsp vanilla
Directions
- Pre-heat oven to 350 degrees
- Place oats in a large mixing bowl and pour in hot water
- Cut up the stick of butter and add to oatmeal mixture and let stand for 20 minutes
- After 20 minutes add the remaining ingredients for the cake and stir well to combine
- Baked in a greased and floured 9×13 pan for 30-35 minutes, until a toothpick inserted in the middle of the cake comes out clean
- After the cake has cooled for 10 minutes, combine the topping ingredients in a mixing bowl
- Spread over the top of the cake, and place under the broiler about 5 inches away from heat source. Keep an eye on it while it broils, it quickly goes from almost golden brown to black in just a few seconds
