A reasonable imitation of KFC’s coleslaw

Ingredients

  • 6 Cups shredded cabbage

  • 1/4 cup shredded carrot

  • 1 Tbs grated onion

  • Dressing
  • 1/2 tsp celery seeds

  • 3/4 cup buttermilk

  • 1/2 cup mayonnaise

  • 2 Tbsp lemon juice

  • 2 Tbsp vinegar

  • 1 tsp kosher salt

  • 1/1 tsp freshy ground black pepper

  • 1/3 cup granulated sugar

Directions

  • Mix together cabbage, carrot and onion in a large bowl
  • In a small bowl whisk together the ingredients for the dressing until well combined
  • Add the sauce to the cabbage mixture and stir until well combined
  • Cover with plastic wrap and allow to chill for six hours in the refrigerator

Notes

  • You can substitute a 14 oz. package of coleslaw mix for the cabbage and carrot as a short cut. If you really want it to be close to Colonel Sander’s try shedding the mix to a finer texture with a food processor
