Easy chili for weekend nights

Ingredients

  • 1 lb ground beef

  • 2 medium onions, chopped

  • 1 28 oz can diced tomatoes

  • 1 8 oz can tomato sauce

  • 2 tsp chili powder

  • 2 tsp of kosher salt

  • 2 tsp ground cumin

  • 1/4 tsp of cinnamon

  • 1/4 tsp of cayenne red pepper

  • 1 15 oz can kidney beans, drained and rinsed

Directions

  • Brown ground beef and onion in large pot until meat is brown and the onion is tender; drain off fat
  • Stir in spices, and cook for a couple of minutes
  • Add the tomatoes, and heat to boiling. Reduce heat; cover and simmer 2 hours, stirring occasionally
  • Stir in beans, when warm serve chili with toppings of your choice

Notes

  • If I am serving this to children, I will use tomato puree instead of diced tomatoes, and will chop the onions with a food processor. Kids often object to the texture of onions and tomatoes, rather than the taste
